Healthy Spinach Noodles Recipe

Ingredients
- 1 cupspinach puree
- 3 cupsboiled noodles
- 1 tbspbutter
- 2 tspfinely chopped garlic (lehsun)
- 1 cupfinely chopped spring onion (whites and greens)
- 1/2 cupsliced red capsicum
- 1 cupmilk
- 2 tspcheese spread
- saltand freshly ground black peppercorns (kalimirch) to taste
- 2 tspcornflour dissolved in 1 tbsp water
For boiling the noodles
- 200gms1 packet Hakka noodles
- 2 tspoil
- saltto taste
Directions
For boiling the noodles
- Boil enough water in a deep non-stick pan, add 1 tsp of oil and salt and mix it well and once the water starts boiling, add the noodles, mix it well and cook on a medium flame for 8 to 10 minutes or till they are soft and stir occasionally.
- Switch off the flame and drain out all the excess water from the noodles and then pour some cold water on the noodles to stop further cooking.
- Put the remaining 1 tsp of oil over it and mix it gently and this will prevent the noodles from sticking together and keep it aside.
How to Proceed
- Heat the butter in a broad, non-stick pan, add the garlic and fry for a few seconds and add the spring onions whites and capsicum and fry on a medium flame for 1 to 2 minutes.
- Add the spinach puree, mix well and cook on a medium flame for 1 to 2 minutes and stir occasionally.
- Add the milk and cheese spread, mix it well and cook on a medium flame for 2 to 3 minutes and stir occasionally.
- Add the salt and pepper, mix it well and cook for 1 to 2 minutes and add the cornflour-water mixture, mix it well and cook on a medium flame for 1 to 2 minutes, and stir continuously.
- Add the boiled noodles, mix it lightly and cook on a medium flame for 1 to 2 minutes.
- Once done, switch off the flame and transfer it in a serving bowl and serve it hot.
