Homemade Bourbon Biscuits Recipe

Homemade Bourbon Biscuits is a classic biscuit recipe which loved by all. The biscuits are sandwiched with a delicious layer chocolate butter icing. These biscuits are perfect after school snack for your kid’s. Try this biscuit at your home.
Ingredients
- 1/4 cupsoft butter
- 1/4 cuppowdered sugar
- 3/4 cupplain flour (maida)
- 2 tbspcocoa powder
- 1/2 tspvanilla essence
- 1/2 tspbaking powder
- 3 tbspmilk
- plain flour(maida) for dusting and rolling
- sugarfor sprinkling
For the chocolate butter icing
- 1 tspcocoa powder
- 3/4 tbspchocolate powder
- 1/4 cupbutter or margarine
- 1 cupicing sugar
- a fewdrops vanilla essence
Directions
For the chocolate butter icing
- In a bowl sieve the icing sugar, cocoa powder and chocolate powder and keep it aside.
- In a bowl add butter and mix it with a help of a wooden spoon for 2-3 min until light and smooth.
- Add the icing sugar-chocolate mixture gradually and mix it well and also add the vanilla essence and mix it well and keep it aside.
How To proceed
- In a bowl add the butter and sugar and mix it very well by using a spoon and mix it until smooth.
- Add the plain flour, cocoa powder, vanilla essence and baking powder to the butter-sugar mixture and mix it well and knead into a dough by using approx. 3 tbsp of milk.
- Dust a little plain flour on the clean and dry surface, place the dough over it and roll into a 225mm. X 175mm. (11” x 9”) rectangle.
- Sprinkle a little sugar evenly over it, and again roll it lightly and cut the rolled dough into 20 equal rectangle portions.
- Place it on a baking tray and bake it on a pre-heated oven at 180°c (360°f) for 20 minutes and once baked, keep it aside it to cool.
- Once cooled, apply the prepared chocolate butter icing evenly over the biscuit and sandwich it with another biscuit.
- Store in an airtight container and enjoy it whenever you want to.
