Spicy Vegetable Pulao Recipe

Vegetable Pulao is a spicy rice dish prepared rice, various vegetables, and spices. A complete meal for vegetarians and also a perfect dish for any parties. Apart from being tasty, this pulao is full of nutrients. Try this amazing pulao recipe.
Ingredients
- 1 cupboiled mixed vegetables (french beans, and carrot) cut into cubes
- 1/4 cupboiled green peas
- 3 cupscooked rice
- 2 tbspghee
- saltto taste
- 1/2 cupdeep-fried onions( in a deep pan add oil and add the onions and fry till golden brown in color)
For cooking the rice
- 1 1/4 cupsraw rice (chawal)
- 1 tbspoil
- saltto taste
To Be Ground Into A Smooth Paste
- 7garlic (lehsun) cloves
- 7whole dry Kashmiri red chilies, broken into pieces
- 25 mm (1")piece of ginger (adrak)
- 1 tbspcoriander (dhania) seeds
- 1 tspcumin seeds (jeera)
For The Garnish
- 1/2 cupdeep-fried onions
- 2 tbspfinely chopped coriander (dhania)
Directions
For the paste
- In a blender add garlic, red chili, ginger, coriander seeds, cumin seeds, and 1/2 cup of water and blend to a smooth paste.
For cooking the rice
- Wash the rice thoroughly and soak in 3 cups of water for 30 minutes and after30 min, drain the water from the rice and keep it aside.
- Boil a vesselful of water, add 1 tbsp of oil and salt and then add the rice to the boiling water and cook till the rice is cooked and stir once or twice in between.
- Pour into a colander and let the water drain out from the rice and keep it aside for later use.
How to proceed
- Heat the ghee in a deep non-stick pan, add the blended paste and cook on a medium flame for 1 to 2 minutes and stir occasionally.
- Add the mixed vegetables, green peas, salt and 2 tbsp of water, mix it well and cook on a medium flame for 1 to 2 minutes and stir occasionally.
- Add the cooked rice and deep-fried onions, mix it well and cook on medium flame for 2 minutes and stir occasionally and switch off the flame.
- Garnish with deep-fried onions and coriander leaves and serve it hot with cucumber raita.
Notes
- You can use any vegetables of your choice.
