Tasty and Yummy Mixed Vegetable Cutlet Recipe

Mixed Vegetable Cutlet is a scrumptious starter recipe that you can prepare to treat your family members on a weekend evening.This cutlet has a goodness of vegetable, so it healthy and perfect for the kid. Try this yummy and tasty cutlet recipe.
Ingredients
- 1 cupfinely chopped potatoes
- 1/2 cupfinely chopped french beans
- 1/2 cupfinely chopped carrots
- 1/2 cupfinely chopped cabbage
- 2 tbspoil
- saltto taste
- 1/2 tspchili powder
- 1/4 tspturmeric powder (haldi)
- 2 tbspplain flour (maida)
- 1/2 cupplain flour (maida) dissolved in 3/4 cup water
- breadcrumbs for rolling
- oilfor deep-frying
Directions
- Heat the oil in a deep non-stick, add the onions and fry on a medium flame for 1 minute.
- Add the potatoes, french beans, carrots and cabbage and mix it well and cover with the lid and cook on a low flame for 10 to 12 minutes or till all the vegetables are cooked and stir occasionally.
- Sprinkle a little water (approx. 2 tbsp) to avoid the vegetables from burning.
- Add the salt, chili powder, turmeric powder, and plain flour, mix it well and fry on a medium flame for 1 to 2 minutes and then mash the mixture by using a potato masher.
- Remove from the flame, transfer the mixture to a plate and allow it to cool completely.
- Divide the mixture into equal portions and shape each portion into a 50 mm. (2”) flat oval.
- Dip the each cutlet in the prepared plain flour mixture and roll in the bread crumbs and roll till they are evenly coated from all the sides.
- Heat oil in a kadhai and deep-fry each cutlet till it turns golden brown in color from both the sides.
- Drain on absorbent paper and serve it with sweet and sour sauce.
