Homemade Pumpkin Masala Recipe
Pumpkin Masala is spicy and yummy dish that all vegetarians like to have at least once a month. Add jaggery for sweetness as the pumpkin tastes excellent with little jaggery.
Ingredients
- 2 cupsPumpkin
- 1 teaspoonGinger garlic paste
- Water
- ½ teaspoonSugar or jaggery
- 2 tablespoonsBasen
- 1 teaspoonChili powder
- ½ cupCoriander powder
- 5 leavesCurry leaves
- ¼ teaspoonTurmeric powder
- Saltto taste
- 1Onions
- 8Cashew nuts
- ½ teaspoonCumin seeds
- ½ teaspoonMustard seeds
- 1 tablespoonOil
- ½ cupCoriander leaves
Directions
- Cut the pumpkin into big cubes and wash them with water
- Place a pan on flame and add oil to it
- When the oil is hot, add mustard seeds, cumin seeds, cashew nuts, chopped onions
- Mix them well and fry them for few minutes
- Add turmeric powder, curry leaves, salt and mix them well with the onions
- When the onions turn golden brown in color, add ginger garlic paste and cook for 3 more minutes
- Add pumpkin cubes and mix it with onions
- Add coriander powder, chili powder, sugar and fry them for 10 minutes
- Add little water to it and close the lid
- Cook the pieces on low flame till they become tender
- Place another pan and add oil to it
- Then roast besan till it turns golden brown color
- Add the roasted powder to pumpkin curry and cook for 3 more minutes
- Off the flame and add chopped coriander leaves to it.
