South Indian Style Brinjal Fry Recipe

Ingredients
- 1 ½ cup slicedBrinjals
- ½ cupOnions
- ½ cup (Optional)Potatoes
- 1Green chili
- 10 leavesCurry leaves
- ¼ teaspoonUrad dal
- ¼ teaspoonChana dal
- ½ teaspoonGinger garlic paste
- ½ teaspoonRed chili powder
- ¼ teaspoonTurmeric powder
- ½ teaspoonGaram masala powder
- ¼ cupCoriander leaves
- few dropsLemon juice
- 1 tablespoonOil
- to tasteSalt
Directions
- Boil potatoes and peel the skin off
- Cut them into cubes and set them aside
- Instead of boiling, you can prefer roasting the potatoes
- Cut brinjals into slices and keep it aside salted in water
- Place a pan on flame and add oil to it
- Once the oil is hot, add musaterd seeds, cumin seeds, dals
- Fry them for few seconds and add onions, curry leaves, green chili and saute them for 2 minutes
- Add ginger garlic paste and saute it till the raw smell disappears
- Add brinjal and sprinkle salt on it
- Add a pinch turmeric powder and mix it well with brinjal pieces
- Add the boiled potatoes to brinjal and mix them well
- Add red chili powder and cover the lid. Cook for some time
- Add garam masala powder and mix it with potatoes
- Fry it every 3 minutes and then cover the lid
- Off the flame and garnish, it with coriander leaves.
You can add tomatoes to the fry if you want to have something like gravy. Eat the Brinjal Fry with hot rice and little ghee or you can also have it as a side dish.
