South Indian Style Brinjal Fry Recipe

Ingredients
- 1 ½ cup slicedBrinjals
- ½ cupOnions
- ½ cup (Optional)Potatoes
- 1Green chili
- 10 leavesCurry leaves
- ¼ teaspoonUrad dal
- ¼ teaspoonChana dal
- ½ teaspoonGinger garlic paste
- ½ teaspoonRed chili powder
- ¼ teaspoonTurmeric powder
- ½ teaspoonGaram masala powder
- ¼ cupCoriander leaves
- few dropsLemon juice
- 1 tablespoonOil
- to tasteSalt
Directions
- Step1Boil potatoes and peel the skin off
- Step2Cut them into cubes and set them aside
- Step3Instead of boiling, you can prefer roasting the potatoes
- Step4Cut brinjals into slices and keep it aside salted in water
- Step5Place a pan on flame and add oil to it
- Step6Once the oil is hot, add musaterd seeds, cumin seeds, dals
- Step7Fry them for few seconds and add onions, curry leaves, green chili and saute them for 2 minutes
- Step8Add ginger garlic paste and saute it till the raw smell disappears
- Step9Add brinjal and sprinkle salt on it
- Step10Add a pinch turmeric powder and mix it well with brinjal pieces
- Step11Add the boiled potatoes to brinjal and mix them well
- Step12Add red chili powder and cover the lid. Cook for some time
- Step13Add garam masala powder and mix it with potatoes
- Step14Fry it every 3 minutes and then cover the lid
- Step15Off the flame and garnish, it with coriander leaves.
You can add tomatoes to the fry if you want to have something like gravy. Eat the Brinjal Fry with hot rice and little ghee or you can also have it as a side dish.
