Healthy Palak Mangodi ki Sabzi

Ingredients
- 500 gmsSpinach
- ¼ teaspoonSugar
- ½ gmsMangodi
- 4Tomatoes
- 1Green chili
- 1 inchGinger
- 2 tablespoonsOil
- ½ teaspoonCumin seeds
- ¼ teaspoonTurmeric powder
- 2 tablespoonsFresh cream
- 1 tablespoonGram flour
- Saltto taste
- ¼ teaspoonRed chili powder
- 2 tablespoons choppedGreen coriander
Directions
- Step1Wash the leaves with water once or twice and place them on a plate
- Step2Let water drain completely from the leaves and place them in a bowl
- Step3Add drinking water to it along with sugar
- Step4Boil it on medium flame for about 10 minutes
- Step5Off the flame
- Step6Place a pan on flame and add oil to it
- Step7When the oil is hot, add mangodi and roast them on low flame till they turn slightly brown in color
- Step8Remove the roasted mangodi on plate and add gram flour to the same pan
- Step9Saute them for a while and add chopped tomatoes
- Step10Add the cooked tomatoes and green chili to grinder. Make it to fine paste
- Step11Grind the boiled spinach to fine paste
- Step12Place a wok on flame and add oil to it
- Step13Add cumin seeds and saute it for few seconds
- Step14Add turmeric powder, ground tomato paste and saute till the oil starts floating on the top
- Step15Add red chili powder and mix it well with the tomato paste
- Step16Add cream to it and saute it for 2 minutes
- Step17Add mangodi to the mixture along with water, roasted gram flour, salt
- Step18Mix them well and cover the lid
- Step19Cook it on low flame
- Step20Once the mangodi gets soft, add ground spinach and cook for 10 minutes
- Step21Off the flame and add the garam masala powder, coriander leaves at the end. The tasty Spinach Mangodi Sabzi is ready to eat.
You can also add chopped onions and ginger garlic paste to make the dish tastier. You can have the curry with any kind of Rotis.
