Prep Time: 15min Cook time: 25min Ingredients: 500 gmsSpinach,¼ teaspoonSugar,½ gmsMangodi,4Tomatoes,1Green chili,1 inchGinger,2 tablespoonsOil,½ teaspoonCumin seeds,¼ teaspoonTurmeric powder,2 tablespoonsFresh cream,1 tablespoonGram flour,Saltto taste,¼ teaspoonRed chili powder,2 tablespoons choppedGreen coriander, Instructions: Wash the leaves with water once or twice and place them on a plate Let water drain completely from the leaves and place them in a bowl Add drinking water to it along with sugar Boil it on medium flame for about 10 minutes Off the flame Place a pan on flame and add oil to it When the oil is hot, add mangodi and roast them on low flame till they turn slightly brown in color Remove the roasted mangodi on plate and add gram flour to the same pan Saute them for a while and add chopped tomatoes Add the cooked tomatoes and green chili to grinder. Make it to fine paste Grind the boiled spinach to fine paste Place a wok on flame and add oil to it Add cumin seeds and saute it for few seconds Add turmeric powder, ground tomato paste and saute till the oil starts floating on the top Add red chili powder and mix it well with the tomato paste Add cream to it and saute it for 2 minutes Add mangodi to the mixture along with water, roasted gram flour, salt Mix them well and cover the lid Cook it on low flame Once the mangodi gets soft, add ground spinach and cook for 10 minutes Off the flame and add the garam masala powder, coriander leaves at the end.
