Carrot Gajar Kheer Recipe
Prepare Gajar Kheer with fresh and healthy carrots. It is definitely a rich source of dietary fibers and anti oxidants. Boil carrot in milk and sprinkle cardamom at the end for better taste.
Ingredients
- 2Carrots
- 2 ½ cupsMilk
- 4 tablespoonsSugar
- 1 tablespoonGhee
- 5Cashews
- 5Almonds
- ¼ teaspoonCardamom powder
- 4 strands (Optional)Saffron
Directions
- Soak almonds and cashews in water for about half an hour
- Remove the skin of almonds and grind them together
- Place a pan and add ghee to it
- Fry the grated carrot until the raw smell disappears
- Boil milk and keep stirring until the milk reduces to little volume
- Add fried carrot along with almond paste to boiled milk
- Cook for few minutes by stirring it occasionally
- Add sugar to the mixture and dissolve it in milk mixture
- Off the flame and add cardamom powder to it
- Add the saffron strands that are dissolved in milk to the Carrot Kheer and serve it hot or cold.
