Kerala Special Avial Recipe
Kerala Aviyal or Avial is one among the delicious Vegetarian Recipes that is prepared with mixed vegetables, curd, coconut and finally is seasoned with coconut oil. Have a look at the recipe.
Ingredients
- 1 cupCucumber
- 1Carrot
- 1Drumstick
- 6Beans
- 1Potato
- 1Raw banana
- few piecesRaw mango
- 100gmsElephant foot yam
- 2 tablespoonsCurd
- 1 cupGrated coconut
- ½ teaspoonCumin seeds
- 3Green chili
- 5 leavesCurry leaves
Directions
- Step1Peel the skin and cut all the vegetables into 2 inch long slices
- Step2Grind grated coconut, green chilies and cumin seeds. Place it aside
- Step3Place pan and coconut oil to it
- Step4Add cucumber, raw banana to the pan and fry them. Add some salt to it. When they are half cooked, then add chopped mango pieces to it
- Step5Add grounded coconut paste and cook for few more minutes
- Step6Add turmeric powder and salt if required. Off the flame and add curd at the end
- Step7Mix them well and season it with curry leaves and coconut oil
- Step8Remove it in a serving bowl and serve it as a side dish for rice.
