Ingredients
For The Rotis
- 1 cupWhole wheat flour (gehun ka atta)
- 1 tbspOil
- Saltto taste
- 1/2 cupMilk, refer notes below
- Whole WheatFlour (gehun ka atta) for rolling
- Oilfor cooking
For The Potato and Green Pea Rolls
- 1 1/2 cupsBoiled and mashed potatoes
- 3/4 cupBoiled and coarsely mashed green peas
- 1/2 cupGrated processed cheese
- 2 tbspFinely chopped mint leaves (phudina)
- 1 tspGreen chili paste
- 1/2 tspGaram masala
- 1 tspLemon juice
- Saltto taste
- Oilfor greasing and cooking
To Be Mixed Into Onion-masala Water
- 1/2 cupFinely chopped onions
- 2 tspFinely chopped mint leaves (phudina)
- 2 tspDried mango powder (amchur)
- 1 tspChili powder
- 1/2 tspGaram masala
- Saltto taste
- 1/2 cupWater
Directions
For the rotis
- In a bowl, wheat flour, oil, salt, milk and mix it nicely and knead into a soft dough and divide the dough into equal portions.
- Roll a portion of the dough into a 175 mm. (7”) diameter circle by using a little whole wheat flour.
- Heat a non-stick tawa (griddle) and cook by using a little oil till both the sides turn golden brown in color.
- Once done, place it on a plate and keep it aside.
For the potato and green pea rolls
- In a bowl, add mashed potatoes, green pea, grated cheese, mint leaves, chili paste, garam masala, lemon juice, and salt and mix it nicely.
- Divide the mixture into equal portions and roll each portion into a long oblong shape and flatten it.
- Heat a non-stick tawa (griddle) and grease it with little oil and cook the rolls using a little oil till they turn golden brown in color from both the sides and keep it aside.
For onion masala water
- In a bowl, add chopped onion, chopped mint leaves, dried mango powder, chili powder, salt, and water and mix it nicely and keep it aside.
How to proceed
- Place the roti on a clean, dry surface, spread 1 tbsp of the prepared onion-masala water and spread it evenly.
- Place a roll on one side of the roti and roll it up tightly and serve it with glass chilled fruit juice.
Notes
- The quantity of the milk may differ according to the quality of the whole wheat flour so always add milk little by little and make a soft dough.
