Rajma and Spinach Stir Fry are yummy, delicious side dish which you can easily prepare at your home within few minutes. This dish has a nice texture, taste, and also very healthy. You can serve this yummy dish for weeknight dinner and it tastes best with roti or paratha.
Ingredients
- 1 cupRajma (kidney beans), soaked overnight
- Saltto taste
- 2 tbspOil
- 1 tbspFinely chopped garlic (lehsun)
- 2 tspGinger-green chili paste
- 3 cupsChopped spinach (palak)
- 1 cupSliced tomatoes
- 2 tspDried mango powder (amchur)
Directions
- In a pressure cooker, add the rajma and 2½ cups of water and salt and cook till it is soft and once switch off the flame and drain and discard the water and keep the rajma aside for later use.
- Heat the oil in a wok, add the garlic, ginger-green chili paste and spinach and stir-fry on a high flame for 3-4 minutes.
- Add the rajma, tomatoes, dry mango powder and salt and stir-fry for 3 to 4 minutes and switch off the flame and serve it rice or roti.
