Maharashtrian Style Brinjal Rice Recipe

Brinjal Rice Recipe is a popular Maharashtrian household dish. This dish has a nice flavor and also has a nice aroma. This dish can be very easily prepared at your home within few minutes. This dish perfect when you have a sudden guest at your home. Let’s follow this easy and tasty rice recipe.
Ingredients
For The Paste
- 1 tbspOil
- 1/2 cupFinely chopped onions
- 1/4 cupGrated dry coconut (kopra)
- 1/2 tbspCoriander (dhania) seeds
- 1 tspCumin seeds (jeera)
- 1 tspSesame seeds (til)
- 1Star anise (chakri phool)
- 1Small stick cinnamon (dalchini)
- 3Curry leaves (kadi patta)
Other Ingredients
- 1 tbspOil
- 2Cloves (laung / lavang)
- 1Bay leaf (tejpatta)
- 2Cardamoms
- 1Peppercorn
- 1 cupSliced brinjal (baingan/ eggplant)
- 1 1/2 tspChili powder
- 1/2 tspTurmeric powder (haldi)
- 1/4 tspGinger (adrak) paste
- Saltto taste
- 3 cupsCooked long grained rice (basmati)
- 1 tbspFinely chopped coriander (dhania)
For The Garnish
- 1 tbspFinely chopped coriander (dhania)
Directions
For the paste
- Heat the oil in a small non-stick pan, add the onions and fry on a medium flame for 2 minutes.
- Once done, drain on a tissue paper and keep it aside.
- In a non-stick pan, add the coconut and fry on a medium flame for 2 minutes and transfer it on a plate and keep it aside.
- In the small non-stick pan, add the coriander seeds, cumin seeds, sesame seeds, star anise and cinnamon and fry on a medium flame for 1 minute.
- Combine all the sauteed ingredients along with the curry leaves and ¼ cup of water in a blender and blend till smooth and keep it aside.
How to proceed
- Heat the oil in a deep non-stick pan, add the cloves, bay leaf, cardamom and peppercorn and fry on a medium flame for 30 seconds.
- Add the brinjal and fry on a medium flame for 4 minutes.
- Add the prepared paste and 2 tbsp water and fry on a medium flame for 1 minute, and stir continuously.
- Add the chili powder, turmeric powder, garlic paste, ginger paste, salt and 5 tbsp of water, mix it well and cook on a medium flame for 1 minute.
- Add the rice and coriander, mix it gently and cook on a medium flame for 2 minutes and stir occasionally and once done, switch off the flame and serve it hot with any raita of your choice.
