Crispy Coconut Cookies Recipe

Coconut Cookies are a popular snack recipe. These cookies are very tasty and loved by kids too. It makes an apt idea for a kids snack box.This cookie has an amazing flavor and sweet aroma. These cookies are delicious and crispy and taste great with milk or hot cup of tea This cookie has a long shelf life and can be stored for many days.
Ingredients
- 1/2 cupdesiccated coconut
- 3/4 cupplain flour (maida)
- a pinchof salt
- 1/4 tspbaking powder
- 5 tbspbutter (room temperature)
- 1/2 cuppowdered sugar
Directions
- In a bowl, add the plain flour, salt and baking powder, mix it well and keep it aside.
- In a bowl, add the butter and powdered sugar and mix it well with a help of a spatula and mix it till the mixture turns light and creamy.
- Add 2 tsp of water and mix it well with a help of a spatula and add the plain flour-baking powder mixture and mix it well.
- Add the desiccated coconut and 2 tsp of water, mix it well and keep it aside and shape this cookie mixture into 37 mm. (1“) diameter thin circle and arrange them on a greased baking tray.
- Bake the cookies in a preheated oven at 180°c (360°f) for 18 to 20 minutes and once done, remove from the oven and keep it aside to cool and store in an airtight container and enjoy when ever you want to
