Kerala Style French Beans and Carrot Thoran Recipe

French Beans and Carrot Thoran are a dry vegetable dish which is the traditional dish of Kerala. It has a crunchy texture and also has an amazing flavor of various seasoning. It is healthy, simple, and tasty side dish recipe. Let’s follow this recipe.
Ingredients
- 1 1/4 cupschopped french beans
- 3/4 cupchopped carrot
- 1/4 cupfreshly grated coconut
- 1/4 cupturmeric powder (haldi)
- 1 tspchili powder
- 1/4 tspcumin seeds (jeera)
- 1 tspcrushed garlic (lehsun)
- 2 tbspoil
- 1/2 tspmustard seeds ( rai / sarson)
- 1 tspurad dal (split black lentils)
- 5 to 6curry leaves (kadi patta)
- 2whole dry Kashmiri red chilies, broken into pieces
- 1/4 cupfinely chopped onions
- saltto taste
- 1 tspcoconut oil
Directions
- In a plate, add coconut, chili powder, cumin seeds and garlic and mix it very well and keep it aside.
- Heat the oil in a deep non-stick kadhai, add the mustard seeds, urad dal, curry leaves, and Kashmiri red chilies and fry on a medium flame for a few seconds.
- Add the onions, french beans, carrot and salt and fry on a medium flame for 2 minutes.
- Add 2 tbsp water, mix it well and cover it with a lid and cook on a medium flame for 5 to 6 minutes and stir occasionally.
- Add the prepared coconut mixture and coconut oil, mix it well and cook on a medium flame for 1 minute and stir occasionally.
- Switch off the flame and serve it with hot rice
