Tasty and Easy Mango Pancake Recipe

Mango Pancake is a super simple and quick breakfast which is packed goodness of mango, milk, and flour and makes these pancakes more healthy and nutritious. This pancake has a nice tempting flavor and taste and nice soft texture. This is A perfect option for weekend breakfast. Try this tasty and yummy pancake at your home.
Ingredients
For The Pancakes
- 1/4 cupplain flour (maida)
- 1/4 cupcornflour
- 1/4 cupmilk
- a pinchof salt
- butterfor greasing and cooking
To Be Mixed Into A Mango Filling
- 1 cupchopped mangoes
- 2 tbspgrated coconut
- 1/2 cupfresh cream
- 2 tbsppowdered sugar
Directions
For the pancakes
- In a bowl, add plain flour, cornflour, milk, salt, and also pour ¼ cup of water and mix it very well till no lumps remain by using a whisk.
- Grease a 125 mm. (5") diameter non-stick pan with the butter and pour 2 tbsp of the batter, tilt the pan around quickly so that the batter coats the pan evenly
- Brush a little butter on the sides and when the sides start to peel off, flip it and cook on the other side for 30 seconds.
- Once done, transfer it on a plate and keep it aside.
For Mango Filling
- In a bowl, add chopped mangoes, grated coconut, fresh cream, powdered sugar and mix it nice.
- Divide the mango filling in equal portions and keep it aside.
How to proceed
- Place a pancake on a clean, dry surface, place a portion of the stuffing on one side of the pancake and fold it over it to make a semi-circle.
- Serve it and relish it taste and flavour.
