Tasty Cauliflower Stuffed Puri Recipe
Cauliflower Stuffed Puri is a popular flat fried bread of North Indian cuisine. This simple, delicious flat bread is crispy and flaky from outside and soft and yummy from inside. Ingredients
For The Puris
- 1 1/4 cupswhole wheat flour (gehun ka atta)
- 1/4 tspturmeric powder (haldi)
- 1/2 tbspghee
- saltto taste
- 3/4 cupfinely grated cauliflower
- 1/4 cupfreshly grated coconut
- 2 tbsproasted and coarsely pounded peanuts
- 1 tspfinely chopped green chilies
- 1 tbspfinely chopped coriander (dhania)
- saltfinely chopped coriander (dhania)
- whole wheatflour (gehun ka atta) for rolling

Directions
For the puris
- In a deep bowl, add wheat flour, turmeric powder, ghee,salt, and enough water and knead into a semi-stiff dough
- Knead for 5 minutes, cover with a muslin cloth and keep it aside.
For the stuffing
- In a bowl, add grated cauliflower, grated coconut, peanuts, green chilies, chopped coriander leaves, and salt and mix it nicely.
- Divide the stuffing into equal portions and keep it aside.
How to proceed
- Roll out one portion of the dough into a 75 mm. (3”) diameter thin circle and dust a little whole wheat flour.
- Put a little prepared stuffing in the center and close the edges to cover the stuffing completely.
- Roll out again into 75 mm. (3”) diameter circle with the help of a little whole wheat flour.
- Heat the oil in a kadhai and deep-fry the puris, a few at a time and fry till they turn golden brown in color from both sides.
- Drain on an absorbent paper and serve it with any pickle of your choice and complete a hearty meal.
