Easy Broccoli and Baby Corn Noodles Recipe

Ingredients
- 1/2 cupblanched broccoli florets
- 1/2 cupdiagonally cut and blanched baby corn
- 3 cupsboiled noodles
- 2 tbspoil
- 2 tspchopped ginger (adrak)
- 2 tbspfinely chopped garlic (lehsun)
- 2 tbspfinely chopped celery (ajmoda)
- 1/2 cupsliced onions
- 1/2 cupcarrot julienne
- 1/2 cupsliced capsicum
- saltfreshly ground black pepper (kalimirch) to taste
For boiling the noodles
- 1 packet (200gms)Hakka noodles
- 2 tspoil
- saltto taste
Directions
For boiling the noodles
- Boil enough water in a deep non-stick pan, add 1 tsp of oil and salt and mix it well and once the water starts boiling, add the noodles, mix it well and cook on a medium flame for 8 to 10 minutes or till they are soft and stir occasionally.
- Switch off the flame and drain out all the excess water from the noodles and then pour some cold water on the noodles to stop further cooking.
- Put the remaining 1 tsp of oil over it and mix it gently and this will prevent the noodles from sticking together and keep it aside.
How to Proceed
- Heat the oil in a wok or a deep non-stick kadhai on a high flame, add the ginger, garlic, celery and onions and fry on a medium flame for 2 minutes.
- Add the carrots and capsicum and fry on a medium flame for 2 minutes.
- Add the broccoli and baby corn and fry on a medium flame for 1 minute.
- Add the boiled noodles, salt and pepper, mix it well and cook on a medium flame for 2 minutes and stir occasionally.
- Once done, transfer it serving bowl and serve it with any sauce of your choice.
