Tasty Cucumber Pancake Recipe

The addition of cucumber makes this pancake more healthy and nutritious. This pancake has a nice flavor, soft texture, and also has a nice color. This pancake tastes best when served hot. Ingredients
- 1/3 cupgrated cucumber
- saltto taste
- 1/2 cuprice flour (chawal ka atta)
- 2 tbspshredded spinach (palak)
- 2 tbspfresh curds (dahi)
- 1/2 tspchili powder
- a pinchof turmeric powder (haldi)
- 2 tspoil for greasing and cooking
Directions
- In a bowl, add the cucumber and salt, mix it well and keep it aside for 10 minutes and after 10 min, squeeze out the water from cucumber.
- Transfer cucumber in a bowl, and also add rice flour, spinach, curds, chili powder, turmeric powder and also add 3/4 cup water and mix it well to make a smooth batter.
- Heat a non-stick tawa (griddle) and grease it with ¼ tsp oil and pour a spoonful of the batter on it and spread in a circular motion to make 100 mm. (4”) thick round.
- Cook it with ¼ tsp of oil and cook till it turns light brown in color from both sides.
- Once done, transfer it on a plate and serve it with green chutney.
