Mixed Vegetable Clear Soup Recipe

Mixed Vegetable Clear Soup is a healthy and wholesome soup recipe that you can easily prepare at your home with easily available ingredients. This soup has a nice a crunchy taste of various vegetables. It is a prefect soup for growing kid’s and women. You can have this soup as an appetizer before any meal. Ingredients
- 1/4 cupfinely chopped cauliflower
- 1/4 cupfinely chopped carrot
- 1/4 cupfinely chopped cabbage
- 1/4 cupfinely chopped tomatoes
- 1/4 cupfinely chopped capsicum
- 1 tspoil
- 2 tspfinely chopped garlic (lehsun)
- 1 tspfinely chopped ginger (adrak)
- 1 tspfinely chopped green chilies
- saltfreshly ground black pepper (kalimirch) to taste
- 2 tbspfinely chopped fresh mint leaves (pudina)
- 2 tbspfinely coriander (dhania)
- 2 tsplemon juice
Directions
- Heat the oil in a wok or a deep non-stick pan, add the garlic, ginger and green chilies and fry on a medium flame for a few seconds.
- Add chopped cauliflower, chopped carrot, cabbage, tomatoes, capsicum and fry on a medium flame for 2 minutes.
- Add 3 cups of water, salt and pepper, mix it well and cook on a medium flame for 3 minutes and stir occasionally.
- Once done, switch off the flame and add the mint leaves, coriander and lemon juice and mix it well.
- Serve it hot with toast and enjoy it with your loved once.
