Delicious Baby Corn and Paneer Jalfrezi Recipe

Baby Corn and Paneer Jalfrezi is an Indian style stir fry dish which tastes delicious and looks beautiful. This is also a popular restaurant dish. This dish can be served as an appetizer or as a side dish with any meal. This dish is prefect when you have a sudden guest at your home. This dish tastes best with any Indian bread. Try this dish at your home.
Ingredients
- 3/4 cupbaby corn , cut into 4 lengthwise and blanched
- 1 cuppaneer (cottage cheese), cut into 25 mm. (1") strips
- 1/4 cupthinly sliced spring onion whites
- 1/4 cupthinly sliced green capsicum
- 1/4 cupthinly sliced yellow capsicum
- 1/4 cupthinly sliced red capsicum
- 2 tbspoil
- 1/4 tspturmeric powder (haldi)
- 1/2 tspchili powder
- 1/2 tspcoriander-cumin seeds (dhania-jeera) powder
- 1/2 cupthinly sliced tomatoes
- 2 tbsptomato ketchup
- 2 tbsptomato puree
- 1/4 tspgaram masala (optional)
- 1 tspvinegar
- 1/4 tspsugar
- saltto taste
- 2 tbspfinely chopped spring onion greens
For The Garnish
- 1 tbspfinely chopped spring onion greens
Directions
- Heat the oil in a wok/kadhai, add the spring onion whites and fry on a medium flame for 1 minute.
- Add the green, red and yellow capsicum and fry on a medium flame for 2 to 3 minutes.
- Add the baby corn, turmeric powder, chili powder, coriander-cumin seed powder, tomatoes, tomato ketchup, tomato purée, mix well and fry on a medium flame for 1 to 2 minutes and stir occasionally.
- Add the paneer, garam masala, vinegar, sugar and salt, mix it well and cook on a medium flame for 1 minute.
- Add the spring onion greens and a little water, mix it well and cook on a medium flame for 1 minute.
- Once switch off the flame and garnish with spring onion greens and serve it hot with any Indian bread.
