Easy Carrot Methi Sabzi Recipe

Ingredients
- 2 cupscarrot cubes
- 2 cupsfinely chopped fenugreek (methi) leaves
- 2 tspoil
- 1/2 tspcumin seeds (jeera)
- 3/4 cupfinely chopped onions
- 1 tspfinely chopped green chilies
- 1 tspfinely chopped garlic (lehsun)
- 1/4 tspturmeric powder (haldi)
- 2 tspcoriander (dhania) powder
- saltto taste
Directions
- Step1Heat the oil in a non-stick kadhai and add the cumin seeds and when the seeds crackle, add the onions and fry on a medium flame for 1 minute.
- Step2Add the green chilies and garlic, mix it well and fry on a medium flame for 30 seconds.
- Step3Add the fenugreek leaves, turmeric powder,coriander powder, mix it well and cook on a medium flame for 1 to 2 minutes and stir occasionally.
- Step4Add the carrots, salt and 1 cup of water, mix it well and cover it with a lid and cook for 7 to 8 minutes and stir occasionally.
- Step5Once done, switch off the flame and serve hot with paratha or roti.
