Yummy Soya Kofta Recipe

Soya Kofta is a healthy and innovative twist to the normal Kofta curry. The fried soya dumplings are cooked in spicy and tangy based gravy. This dish is very easy to prepare and it makes a scrumptious dish for a weekend lunch or dinner. This is tempting, flavorful, and tasty dish. This dish is prefect when you want to have something different and tasty.
Ingredients
For The Soya Koftas
- 1/2 cupsoya granules
- 1/2 cupboiled and mashed potatoes
- 1/2 tspginger (adrak) paste
- 1/2 tspgreen chili paste
- 1 tbspchopped mint leaves (pudina)
- 1 tbspbesan (gram flour)
- saltto taste
- oilfor deep-frying
For The Gravy
- 1 tbspoil
- 1 cupfinely chopped onions
- 1/2 tspginger (adrak) paste
- 1/2 tspgarlic (lehsun) paste
- 1/4 cupfresh tomato pulp
- 1 tspfennel seeds (saunf) powder
- 1/4 tspturmeric powder (haldi)
- 1 tbspcoriander-cumin seeds (dhania-jeera) powder
- 1 tspchili powder
- 2 tbspchopped mint leaves (pudina)
- 3/4 cupmilk
- 1/2 tspgaram masala
- saltto taste
For The Garnish
- 2 tbspfinely chopped mint leaves (pudina)
Directions
For the soya koftas
- Soak the soya granules in enough hot water, cover with a lid and keep it aside for 5 minutes and then squeeze out all the water from the granules and keep aside.
- In a bowl, add soya granules, mashed potatoes, ginger paste, garlic paste, chopped mint leaves, besan salt and mix it nicely and knead into a soft dough Divide the dough into equal portions and heat the oil in a kadhai and deep-fry the koftas a few at a time and fry till they turn golden brown in color from all sides.
- Drain on an absorbent paper and keep it aside.
For the gravy
- Heat the oil in a deep non-stick pan, add the onions and fry on a medium flame for 2 minutes or till they turn golden brown.
- Add the ginger and garlic, mix it well and fry on a medium flame for a few seconds.
- Add the tomato pulp, fennel powder, turmeric powder, coriander-cumin seed powder and chili powder, mix it well and cook on a medium flame for 1 to 2 minutes or cook till the oil separates from the gravy and stir occasionally.
- Add the mint and milk, mix it well and cook on a medium flame for 2 to 3 minutes and stir occasionally.
- Switch off the flame and blend to a smooth paste and pour the prepared paste back into the pan, add the garam masala, salt and ½ cup of water, mix it nicely and cook on a medium flame for 2 minutes and stir occasionally and switch off the flame.
How to proceed
- Just before serving, re-heat the gravy, add the fried koftas, mix it gently and cook on a medium flame for 2 to 3 minutes and stir occasionally.
- Garnished with mint leaves and serve it with rice.
Tip:
- If the Kofta mixture seems to be soft then add more besan to adjust the consistency.
