Whole Wheat Salad with Corn and Peanuts Recipe

Ingredients
- 1whole wheat (gehun)
- 1/4 cupboiled sweet corn kernels (makai ke dana)
- 1/2 cupboiled peanuts
To Be Mixed Into A Dressing
- 1 1/2 tbspolive oil
- 2 tsplemon juice
- 2 tspred wine vinegar
- 1 tspdry red chili flakes (paprika)
- saltto taste
For The Garnish
- 1/4 cupfreshly grated coconut
Directions
- In a bowl add olive oil, lemon juice, red wine vinegar, red chili flakes, and salt and mix it nicely and keep it aside.
- Soak the whole wheat with enough water in a deep bowl for overnight and next day in a pressure cooker add wheat with enough water, mix it well and pressure cook for 40 min or cook till it is completely cooked.
- Allow the steam to escape before opening the lid and drain the water and keep it aside.
- In a bowl add cooked wheat, boiled sweet corn, boiled peanuts and prepared dressing and toss it well and garnish it with grated coconut and serve it.
