Spicy Mixed Vegetables Rice Cutlet Recipe

Mixed Vegetables Rice Cutlet is mouth-watering snack which is perfect for any occasion. These cutlets are made with rice and mixed vegetables. This is an easy and quick recipe to make and this is loaded with carbohydrates, vitamins, and minerals. These cutlets are crisp outside and soft inside. Ingredients
- 1 cupCooked rice (In a pan, add water and rice, cook till rice is soft and then drain the water and keep it aside)
- 1/2 cupPotato (aloo), cooked & mashed
- 1Onion, finely chopped
- 1Green Chili, chopped
- 1Carrot, grated
- 2 tablespoonsCoriander leaves (Dhania), chopped
- 1 pinchTurmeric powder (Haldi)
- 1/4 tablespoonRed chili powder
- 1/2 tablespoonCumin powder
- 1/2 tablespoonCoriander Powder
- 1/4 tablespoonGaram masala powder
- 1/2 cupBread crumbs
- Saltto taste
- 1 tablespoonAll Purpose Flour (Maida)
- as neededwater
- Cooking oilas needed to shallow fry
Directions
- In a bowl add cooked rice,mashed boiled potato, chopped onion, chopped green chili,grated carrot,chopped coriander leaves, mix it nicely.
- Add turmeric powder,red chili powder, cumin powder, coriander powder, garam masala and salt and mix it nicely with a help of potato masher.
- Divide the mixture into equal portions and shape each portion into a 50 mm. (2”) round flat cutlet and keep it aside.
- In a bowl and add all purpose flour and water, mix it nicely and make a pouring consistency batter.
- In a plate add plain flour, keep it aside and in another plate add bread crumbs and keep this both aside.
- Roll the cutlets in plain flour mixture and then dip them in all purpose flour batter and then in bread crumbs.
- Heat 3-4 tablespoon oil in a frying pan or skillet, place the cutlets on pan or skillet and cook until it is lightly browned and crisp from both the sides.
- Drain it on a tissue paper and serve it with any chutney of your choice.
