Healthy Chickpea And Mint Rice Recipe

Chickpea and Mint Rice is an easy one pot meal and it is made with a versatile mixture of rice chickpea, and mint leaves. This dish is perfect when you want to have something different but also healthy. This dish has a refreshing flavor of mints and crunchy taste of chickpea. It is perfect for a weekend lunch or dinner and also can be packed in your lunch box.
Ingredients
- 1/2 cupboiled kabuli chana (white chick peas)
- 1/4 cupfinely chopped mint leaves (phudina) leaves
- 2 cupssoaked and cooked brown rice
- 1 tspoil
- 1 tspfinely chopped garlic (lehsun)
- 1/2 cupthinly sliced onions
- 1bay leaf (tej patta)
- 1/2 cupchopped and boiled mixed vegetables (french beans , carrots and green peas)

- 1 tspgreen chili paste
- 1/2 tsplemon juice
For Cooking Brown Rice
- 3/4 cupbrown rice

Directions
For Cooking Brown Rice
- Soak the brown rice in enough water for 30 minutes after 30 min, drain the water from the rice.
- In a pressure cooker, add the soaked the brown rice with 1 cup of water in a pressure cooker and pressure cook for 35 min or until the rice is soft.
- Allow the steam to escape before opening the lid and switch off the flame and keep it aside.
How to proceed
- Heat the oil in a broad non-stick pan, add the garlic, onions and bay leaf and fry on a medium flame and fry till the onions turn brown.
- Add the cooked brown rice, boiled kabuli chana, all the mixed vegetables and salt, mix it well and cook on a medium flame for 1 to 2 minutes.
- Add the green chili paste, chopped mint leaves and lemon juice, mix it well and cook on a medium flame for a minute and once done, switch off the flame.
- Serve it hot with any raita of your choice.
