Cucumber Cottage Cheese Sandwich Recipe

Cucumber Cottage Cheese Sandwich is one of the easy and tasty sandwich recipes possible. Made with cucumber slices and cottage cheese, this bread recipe is ideal for a quick meal. Ingredients
- 12Bread Slices
- 1Medium Size Cucumber
- 1 cupGrated paneer (cottage cheese)
- 1 tbspGreen Chutney
- 1 tbspButter
- SaltTo Taste
For Green Chutney
- 1 1/2 cupsRoughly Chopped Coriander (dhania)
- 4Green Chilies, Roughly Chopped
- 1 1/2 tspLemon Juice
- 1 tbspSugar
- 4 tbspFreshly grated coconut
- SaltTo Taste
Directions
For Green Chutney
- In a blender add coriander leaves, green chili, lemon juice, sugar butter, salt and a little water and blend to a smooth paste and keep it aside.
How To Proceed
- Peel and grate the cucumber and squeeze out the excess water from the cucumber and transfer the cucumber into a deep bowl, add the grated paneer, blended green chutney, butter and salt and mix it nicely.
- Place the bread slice on a clean, dry surface, spread a spoonful of the cucumber mixture over it and spread it evenly and cover it with another bread slice and press it lightly.
- Cut each sandwich into 4 pieces and serve it with cheese sauce.
