Lauki Sabzi Recipe
Lauki Sabzi is a healthy and tasty dish and it is especially good for diabetics. This dish is a nutritious recipe that has a goodness of bottle gourd (Lauki/ Doodhi) and it is a perfect wholesome dish for lunch or dinner. It can be served with any Indian meal. Lauki (bottle gourd) is a rich source of fiber and essential minerals, iron and protein. Let’s follow this recipe.
Ingredients
- 5 cupssliced Doodhi ( bottle gourd/Lauki)
- 1 tbspoil
- 2 tspcumin seeds (jeera)
- 1/2 tspasafoetida (hing)
- 8curry leaves (kadi patta)
- 1 tbspsugar
- 2 tspginger-green chili paste
- saltto taste
- 1 tbspcoriander-cumin seeds (dhania-jeera) powder
- 2 tbspfinely chopped coriander (dhania)
- 1 tbsplemon juice
Directions
- Heat the oil in a pressure cooker and add the cumin seeds, curry leaves and asafoetida and when the cumin seeds crackle, add the bottle gourd, sugar, ginger -green chili paste, salt and 1 cup of water, mix it well and pressure cook for 20 min and switch off the flame.
- Allow the steam to escape before opening the lid and open the lid of the cooker and again switch on the flame and add the coriander-cumin seeds powder, coriander and lemon juice, mix it well and cook on a medium flame for 1 minute and stir occasionally and switch off the flame.
- Serve it hot with rice or roti.
