Healthy Clear Broccoli and Carrot Soup Recipe

Clear Broccoli and Carrot Soup is a healthy wholesome soup that is made carrots and broccoli. This soup is a rich source of iron, vitamin C, vitamin A, folic Acid, calcium, and fiber. It is a wholesome soup which is perfect for any season. Let’s follow this soup recipe.
Ingredients
- 1 cupbroccoli florets
- 1 tbspthinly sliced carrots
- 1/2 cupolive oil
- 1 tbspthinly sliced onions
- 1/2 tspfinely chopped garlic (lehsun)
- 2 tbspchopped celery (ajmoda)
- 2 tbspmacaroni
- 1/4 cupsoaked and chopped sun-dried tomatoes
- saltfreshly ground black pepper (kalimirch) to taste
For The Garnish
- 2 tbspgrated Parmesan cheese or mozzarella cheese
Directions
- Step1Heat the olive oil in a deep non-stick pan, add the onions and garlic and fry on a medium flame for 1 minute.
- Step2Add the carrots and celery and fry on a medium flame for 1 minute.
- Step3Add the broccoli, macaroni, 4 cups of hot water and salt, mix it well and cook on a medium flame for 8 minutes and stir occasionally.
- Step4Add the sun-dried tomatoes and pepper, mix it well and cook on a medium flame for 1 minute and stir occasionally.
- Step5Garnish with cheese and serve it hot.
