Mushroom Kathi Roll Recipe

Mushroom Kathi Roll is a popular Indian fast food recipe. The tongue tickling spicy mushroom bhurji wrapped in roti. These rolls are very tasty, healthy and stomach filling food that can be easily prepared at home.
Ingredients
For the roti
- 1 cupplain flour (maida)
- 1/2 tbspcornflour
- 1/4 tbspsoda bi-carb
- 1/2 tbspbutter
- saltto taste
- 2 cupsmushrooms (khumbh), finely chopped
- 3garlic cloves, finely chopped
- 1 tspgrated ginger (adrak)
- 1 largeonion, finely chopped
- 2tomatoes, finely chopped
- 1 tbspcoriander-cumin seeds (dhania-jeera) powder
- 2 tsppav bhaji masala ( easily available in the market)
- 3 tspdried fenugreek leaves (kasoori methi)
- 1/4 cuptomato puree
- 2 tbspfresh cream
- a pinchof sugar
- 1/4 cupchopped coriander (dhania)
- 1 tbspoil
- saltto taste
- gheefor cooking

Directions
For the roti
- In a bowl sieve the flour, cornflour, soda bi-carb and salt and add butter and knead to a soft dough by using enough water and knead it very well, cover with a wet muslin cloth and keep aside for 1/2 hour.
- After 1/2 hour knead it once again and divide into equal portions and roll each portion as thinly as possible.
- Heat the tawa and place the roti and cook on both the sides by using a little ghee and keep it aside.
For the mushroom bhurji
- Heat the oil in a pan, add the garlic, ginger, and onion and fry till the onion turns translucent.
- Add the tomatoes and cook till the oil separates and add the coriander-cumin seed powder, pav bhaji masala, and kasoori methi.
- Mix it well, add the tomato puree and cook for a few more minutes.
- Add the mushrooms and salt and cook well till the mushroom is soft and tender.
- Add the cream, sugar, and coriander and mix it well and keep it aside.
How to proceed
- Divide the mushroom filling into equal portions and spread a portion of the filling evenly on each roti and roll it and cut it into 50 mm. (2") pieces and serve it hot with cheese sauce.
