Easy Tofu Fried Rice Recipe

Tofu Fried Rice is a delicious Indian recipe that can be served as a main course dish. It is a wholesome dish for vegetarians. This dish is very easy to prepare in few minutes. This dish is rich in fiber and protein. The addition of various veggies adds a wonderful crunch to the dish.
Ingredients
- 1 cupBasmati rice
- 200 gramsTofu, cubed
- 1Bay leaf (tej patta)
- 1 teaspoonCinnamon Powder
- 2Onions, finely chopped
- 4Spring Onions (Scallion), finely chopped
- 4Spring Onion (Scallion) greens, finely chopped
- 1/2Red Yellow or Green Bell Pepper (Capsicum), julienne
- 1Carrot, peeled and julienne
- 8Button mushrooms, chopped
- 5cloves Garlic, finely chopped
- 1 tablespoonGinger garlic paste
- 1 tablespoonGreen Chili Sauce
- 1 teaspoonSoya sauce
- as requiredCooking oil
- saltto taste
Directions
- Wash the rice in enough water and keep it aside for 15 minutes and In a pan add rice, bay leaf, 1/4 teaspoon salt, and enough water and once cooked, drain the water from it and spread it on a colander and sprinkle cinnamon powder on it and keep it aside.
- In a kadhai/wok, add the required oil and shallow fry the tofu cubes till they turn brown from both the sides and drain it on a tissue paper and keep it aside.
- In a kadhai, add oil and add chopped garlic and fry for 30 seconds and add chopped spring onion and fry till the onion turns pinkish.
- Add ginger garlic paste and mix it well and add capsicum, carrot, and mushroom and fry it nicely.
- Now add the soya sauce and mix it well and add salt ( remember that salt was already been added to rice while cooking, so add according to it).
- Add the fried tofu cubes and gently mix it and then add the rice, toss it and cook for 2-3 min and switch off the flame.
- Garnish with chopped spring onion greens and serve it with a fresh bowl curd.
