Cheesy Vegetable Pizza Recipe

Cheesy Vegetable Pizza is the most popular and commonly made pizza which has the goodness of vegetables. This pizza has a blasting flavors of different seasoning and soft texture from the cheese. You can serve this yummy pizza as an evening snack or for a light dinner.
Ingredients
For The Cheese Sauce
- 1/2 cupgrated processed cheese
- 2 tbspbutter
- 1 tbspplain flour (maida)
- 1/4 cupmilk
- Saltto taste
- 1/2 cupsliced and blanched baby corn
- 1/2 cupblanched carrot cubes
- 1/2 cupblanched zucchini cubes
- 1/2 cupsliced red capsicum
- 1 tbspbutter

- 2 thinthin crust pizza base [175 mm. (7")
- 1/2 cupgrated mozzarella cheese
- 1/2 cuppizza sauce(easily available in the market)
- 1/4 cupcapsicum juliennes
- 1/4 cupshredded cabbage
- 1/4 cupthinly sliced onions
- 1/4 cupfinely chopped spring onion greens
- 1/4 cupcarrot juliennes
- 1 tspchaat masala

For Pizza Base
- In a bowl add 2 tbsp of lukewarm water and dry yeast and mix it well and cover with a lid and keep it aside for 5 minutes.
- In a bowl add plain flour, yeast-water mixture, olive oil, sugar and salt and knead into a soft dough by using enough water.
- Cover the dough with a wet muslin cloth and keep it aside for 1 hour.
- Press the dough lightly to remove the air and divide the dough into equal portions and roll each portion into a 175 mm. (7”) diameter circle with the help of plain flour and prick each circle evenly with the help of a fork.
- Place a circles on a greased baking tray and bake in a pre-heated oven at 180°c (360°f) for 5 min and once baked, keep it aside.
For the cheese sauce
- Heat the butter in a broad non-stick pan, add the plain flour and cook on a medium flame for 30 seconds and stir continuously.
- Add the milk, ½ cup of water, cheese, salt and pepper, mix well and cook on a medium flame for 2 minutes and stir continuously and switch off the flame and keep it aside.
For the vegetable topping
- Heat the butter in a broad non-stick pan, add all the vegetables and fry on a medium flame for 2 to 3 minutes.
- Add the salt and pepper and mix it well and switch off the flame and keep it aside.
How to proceed
- Place a pizza base on a clean, dry surface and spread a portion of the cheese sauce and arrange a portion of the vegetable topping evenly over it.
- Spread ¼ cup of pizza sauce evenly over it and finally sprinkle ¼ cup of cheese over it.
- Place the pizza on a greased baking tray and bake in a pre-heated oven at 200°c (400°f) for 10 to 12 minutes or till the base is evenly brown in color and the cheese melts.
- Cut into equal wedges and serve it with a chill glass clod coffee.
