Schezwan Vegetable Fried Rice Recipe

Schezwan Vegetable Fried Rice is popular Indo-Chinese rice dish. It is an excellent option for a one-pot meal. As you get all the nutrition from the vegetables and the rice . It is a quick, healthy, attractive, colorful and tasty dish which is ideal for weekend lunch or dinner.
Ingredients
- 2 cupsRice
- 4 cupswater
- 1/4 cupfinely chopped cabbage
- 1red onion finely chopped
- 2 tbspfrench beans chopped
- 2 tbspcarrot chopped
- 2 tbspspring onions / scallions green, finely chopped
- 2green chilies, finely chopped
- 1 tbspgarlic, chopped
- 1/2 tbspginger, chopped
- 4 tbspSchezwan Sauce or as required(easily available at the market)
- 1/2 tspwhite pepper powder
- 1 tspvinegar
- Pinchof red orange food color
- 2 tbspoil
- Saltto taste
Directions
- In a bowl soak the rice in enough water for 30 min and after 30 min drain water from the rice and keep it aside.
- In a deep pan add 5 cups of water and add the soaked rice and cook it for 30 min or till the rice is 90% cooked and drain water from the cooked rice and keep it aside for later use.
- Heat 2 tbsp oil in a non-stick pan and finely chopped green chilies, finely chopped onion.
- Cook it for a minutes and add 4 tbsp chopped garlic and 2 tbsp chopped ginger and cook it for few seconds.
- Now add finely chopped french beans, carrot and cabbage, 1/2 tsp salt, pinch of white pepper powder and cook it 3-4 minutes.
- Add 3-4 tbsp of Schezwan Sauce and cook it for 2 minutes on a low flame and add the cooked rice and mix it nicely and add chopped green spring onions, 1/4 tbsp vinegar and red food color (optional).
- Toss it well and cook it on a high flame for 2-4 min and switch of the flame and serve it hot with corn manchurian.
