Drumstick Sambar Recipe

Sambar is an all time favorite South Indian Dal Recipe. Drumstick gives a special flavor and aroma to this sambar. It is a traditional dish which you can serve with idli, dosa, and rice to have a complete mouth-watering meal.
Ingredients
- 1/2 cuptoor dal / arhar dal
- 2drumsticks / muringakka
- 6 – 7shallots
- 1/2 teaspoonturmeric powder
- 1 teaspoonchili powder
- 2green chilies (slit lengthwise)
- 2tomatoes (medium -finely chopped)
- 2 teaspoonssambar masala powder
- one smalltamarind lemon sized ball
- 2 tablespoonscoriander leaves (finely chopped)
For tempering
- 2 tablespoonoil
- 1 teaspoonmustard seeds
- 1 – 2dry red chili
- 1 teaspoonUrad dal
- 1/4 teaspoonfenugreek seeds
- 1 teaspooncumin seeds
- a generous pinchAsafoetida powder / hing
- 10 – 15curry leaves
Directions
- Clean and wash the dal, soak it in 2 1/2 cups of water for 10 – 15 minutes and cut the drumstick into 2 inch long pieces and remove the outer strings/skin.
- In a pressure cooker add dal, turmeric powder, green chili, and cook for 25 min and once the pressure subsides, mash it well with the back of a spoon and keep it aside.
- In a pan or kadhai add oil and then add mustard seeds and when mustard seeds splutter, add fenugreek seeds and fry it.
- Add curry leaves, dry red chili, and asafoetida powder and add drumstick pieces, shallots and fry for 5 – 10 seconds.
- Add red chili powder, sambar powder, and cook for 2 more seconds and then add chopped tomato pieces and cook well till they turn mushy.
- Add 1 cup of water, salt, and cook it on a low flame and once the drumstick pieces are cooked, add tamarind extract and cook on a flame to low for 10-12 min and stir occasionally and cook till the raw smell of tamarind goes off.
- Add the cooked dal, 1/2 cup of water, mix it well and cook for 5 – 6 minutes and the consistency of sambar should neither be too thick or too thin and so be careful while adding water.
- Switch off the flame and serve it hot rice.
