Masoor Dal and Vegetable Khichdi Recipe

Masoor Dal and Vegetable Khichdi is a very simple recipe that requires only a few ingredients. It is a blend of red lentils (masoor dal), brown rice, vegetables and typical Indian spices. It is very nutritious and perfect dish for the vegetarian.
Ingredients
- 1 cupmasoor dal (split red lentil), washed and drained
- 1/2 cupgreen peas
- 1/4 cuppotato cubes (unpeeled)
- 1/2 cupchopped french beans
- 1 cupbrown rice, washed and drained
- 2 tspghee
- 4cloves (laung / lavang)
- 1 smallstick cinnamon (dalchini)
- 1 tspcumin seeds (jeera)
- 1cardamom (elaichi)
- 1/4 tspasafoetida (hing)
- 1/2 cupchopped onions
- 1 tspgarlic (lehsun) paste
- 1/2 tspturmeric powder (haldi)
- 2 1/2 tspgreen chili paste
- saltto taste
Directions
- In a bowl soak masoor dal and brown rice in enough water for 30 minutes and after 30 min, drain the water from the rice and dal and keep it aside.
- Heat the ghee in a pressure cooker, add the cloves, cinnamon, cumin seeds, cardamom, and asafoetida and fry on a medium flame for a few seconds.
- Add the onions and garlic paste and fry on a medium flame for 1 minute.
- Add the green peas, potatoes, and french beans and fry on a medium flame for 2 minutes.
- Add the soaked rice, masoor dal, turmeric powder, green chili paste and salt and mix it nicely and fry on a medium flame for 2 minutes.
- Add 4 cups of water, mix it well and pressure cook for 25 min and switch off the flame and allow the steam to escape before opening the lid.
- Transfer it to a serving bowl and serve it hot tomato pickle.
