Potato Kathi Roll is a classic Indian Street Food snack that is loved by all. This roll is a quick recipe that can be packed for lunch box or can be served as an evening snack. This is an interesting mouth-watering roll which is very easily made at home.
Ingredients
For The Rotis
- 1 1/2 cupsplain flour (maida)
- 1 tbspcornflour
- 1/2 tspsoda bicarbonate
- saltto taste
- 1 tbspmelted butter
- plainflour (maida) for rolling
- gheefor cooking
- 2 cupsboiled, peeled and mashed potatoes
- 2 tbspchopped coriander (dhania)
- 1/2 cupfinely chopped onions
- 2 tspfinely chopped green chilies
- 1 tspchaat masala
- 1 tbsplemon juice
- saltto taste
To Be Mixed Into A Filling
Directions
For the rotis
- In a bowl add plain flour, cornflour, soda bicarbonate, salt, butter and enough water and knead into a soft dough.
- Cover with wet muslin cloth and keep aside for 15 minutes.
For the Stuffing
- In a bowl add mashed potatoes, chopped coriander leaves, chopped onions, chopped chili, chaat masala, lemon juice, and salt and mix it nicely.
- Divide the filling into equal portions and keep it aside.
How to proceed
- Divide the dough into equal portions and roll a portion of the dough into a 250 mm. (7”) diameter thin circle using a little plain flour.
- Heat a non-stick tawa (griddle) and cook the roti, using a little ghee, till brown spots appear on both the sides.
- Spread one portion of the filling on one end of the roti and roll it up tightly.
- Serve it hot with a glass of fruit juice and relish its taste and flavors.
