Kadhai Vegetable Recipe

Kadhai Vegetable is a quick and easy dish to make that has the goodness of vegetables. This dish is tasty, nutritious, and it is perfect for lunch or dinner. This is a simple recipe but delicious and filled with flavors. A good way to incorporate a variety of vegetables in your meal.
Ingredients
- 10-12French beans cut into ¼ inch pieces
- 2Carrots cut into ¼ inch cubes
- 1/4 mediumCauliflower separated into florets
- 1/4 cupGreen peas
- 2 mediumGreen capsicums cut into ¼ inch cubes
- 1 tablespoonCoriander seeds
- 1 teaspoonCumin seeds
- 4-5Dried red chilies
- 12-15Garlic cloves
- 3-4Green chilies
- 2 one-inchpieces
- 4 tablespoonsOil
- 2 mediumOnions sliced
- 1/2 teaspoonTurmeric powder
- 1 tablespoonCoriander powder
- 1 teaspoonRed chili powder
- 3 largeTomatoes roughly chopped
- Saltto taste
- 1 teaspoonGaram masala powder
- 3 tablespoonsFresh coriander leaves chopped
Directions
- In a blend add coriander, cumin seeds, and three red chilies and blend it coarsely and also blend garlic, green chilies and half the ginger to a smooth paste and also cut the rest of the ginger into thin strips.
- Heat oil in a non-stick kadhai and add the coarsely ground spice masala and add the onions and fry till golden brown in color.
- Add ginger-garlic-green chili paste and fry for one minute and add beans, carrot, cauliflower, peas and mix it and cover it with lid and cook on a low flame and sprinkle a little water if necessary.
- Add turmeric powder, coriander powder, and red chili powder and stir continuously.
- Add tomatoes, salt and half a cup of water and cook till the vegetables are tender and the water has dried up.
- Add capsicums and salt and cook for 4-5 min on a low flame and sprinkle garam masala powder and mix it well and switch off the flame
- Garnish with ginger strips and coriander leaves and serve it hot with roti.
