Boil a vesselful of water, add 1 tbsp of oil and salt and add the rice to the boiling water and cook till the rice is cooked properly, stir once or twice in between. Pour into a colander and let the water drain out from the rice and keep it aside. How to proceed In a bowl add the curd, salt, and cooked rice and mash it well and keep it aside. Heat the ghee in a small pan and add the mustard seeds and when the seeds crackle, add the urad dal, red chili, and hing and fry it for a second. Tasty Coriander Curd Rice Recipe

Curd Rice is a popular South Indian household dish. This recipe of curd rice is slightly different for regular curd rice, as it is flavored with coriander leaves, It is a flavorful and a soothing dish and especially perfect for summer season.

Ingredients

  • 3 cupsSteamed rice (chawal)
  • 1 cupFresh curds (dahi)
  • 1/4 cupChopped coriander (dhania)
  • saltTo Taste

For Steamed Rice

  • 1 1/4 cupsRaw rice (chawal)
  • 1 tbspOil
  • saltTo taste

For The Tempering

  • 1dry Red chili , broken into pieces
  • 2 tspUrad dal (split black lentils)
  • 1 tspMustard seeds ( rai / sarson)
  • 1/4 tspAsafoetida (hing)
  • 2 tbspGhee or oil

Directions
