Quick and Easy Egg Pulao Recipe

Egg Pulao is an amazing dish made with boiled eggs and rice. This dish is wonderful, delicious and comforting Indian meal. It is easy and quick dish to make on a busy day.Try this quick and easy pulao at your home for your family members and relish a hearty meal.
Ingredients
For frying eggs
- 12Whole Eggs, hard-boiled
- 1 tablespoonGhee
- 1 teaspoonRed chili powder
- 1/4 teaspoonWhole Black Pepper Corns, freshly crushed
- 4 to 5Green Chilies
- 12cloves Garlic
- 2 inchGinger
- 3 cupsBasmati rice, soaked for 45 min
- 1 cupOnions, finely sliced
- 1 cupTomato, finely sliced
- 3/4 cupYogurt (Curd), whisked well
- 3 to 4Green Chilies, slit
- 1/4 cupMint Leaves (Pudina), chopped
- 1/4 cupCoriander leaves (Dhania), chopped
- 1Lemon juice
- Wateras required
- 1-1/2 teaspoonCumin seeds
- 6-8Green cardamom
- 2Bay leaves (tej patta)
- 2 inchCinnamon Stick
- 1Star anise
- 1/2 teaspoonTurmeric powder (Haldi)
- 8-10Whole Black Pepper Corns
- 3 tablespoonGhee, or oil
- Saltto taste

Directions
- In a blender add green chili, garlic, and green chili and blend to a smooth paste and keep it aside.
- In a pan, heat 1 tablespoon of ghee and add the boiled eggs and add red chili powder and toss it well.
- Add freshly crushed black pepper and fry until the eggs are slightly brown in color and keep them aside.
- In a deep pan heat ghee or oil and add cumin seeds, green cardamom, cinnamon, black peppercorns, star anise and fry it for few seconds.
- Add the blended paste of green chili, garlic, ginger and fry for a minute and add onions and add sliced tomatoes, slit green chilies and cook until the tomatoes are soft.
- Add turmeric and mix it nicely and add whisked yogurt and fry until the yogurt is well combined with the spices.
- Add salt, chopped mint, lemon juice and coriander leaves and cook for a minute and add the rice and gently mix it and enough water.
- Give a slight slit to the fried eggs and add it to a rice and cover with the lid and cook on a low flame until 80% of the water dries up.
- Switch off the flame and transfer it to a serving bowl and serve it hot with cucumber raita.
