Tasty Eggless Mango Cheesecake Recipe

Fresh ripe mangoes are used to prepare this light, moist, and refreshing Cheesecake. It is an amazing, tasty, and just as exotic as it looks. This recipe is delightfully delicious and can be enjoyed any time in the day. Let’s learn how to make this Eggless Mango Cheesecake recipe.
Ingredients
- 250 gramsCream cheese, at room temperature(easily available at the market)
- 3/4 cupMango
- 1/2 cupSugar
- 3/4 cupMilk
- 1 tablespoonGelatin, unflavored
- 1/4 cupWater
- 1 1/2 cupDigestive biscuit, crushed
- 1/3 cupButter, melted
- 1/4 cupMango Pulp
- Kiwiberries or mango for garnishing
Directions
- Take a spring form pan and line the bottom and the sides with parchment paper or butter paper and add 1/3 cup melted butter and1 1/2 cup crushed digestive cookies and mix it properly
- Press the cookie-butter mix to the bottom of the springform pan with your fingers or with a wide spoon to form a firm base for the cheesecake and keep it aside.
- Microwave 1/4 cup water in a bowl for a 1-2 minute or till it boils and add gelatin to the hot water and mix till it dissolves completely.
- In a bowl add the gelatin mixture and 3/4 cup of mango puree and gently mix it and keep it aside.
- In a blender add cream cheese, sugar, and milk and blend it until smooth and now add the mango gelatin mixture to the blended mixture and blend all together and till smooth.
- Pour the mix over the cookie base and garnish with kiwi, berries, and mango and cover with a cling wrap and refrigerate for at least 2-4 hours or overnight.
- Cut into slices and serve it.
