Dhaba Style Dal Fry Recipe

Ingredients
- 1 teaspoonAsafoetida (hing)
- 1 teaspoonCumin seeds
- 1 teaspoonMustard seeds
- 1Bay leaf (tej patta), broken
- 3Green Chilies, salted (in a bowl add green chili and add salt and mix it nicely)
- 4Cloves
- 1Black cardamom (Badi Elaichi)
- 1Star anise
- 2Green cardamom
- 2Onions, thinly sliced
- Gheeas required
- 1-1/2 tablespoonsGinger garlic paste
- 1 teaspoonRed chili powder
- 1 teaspoonCoriander Powder
- 3 teaspoonGreen Chilies
- 1sprig Coriander leaves (Dhania), finely chopped
For the Dals
- 2 tablespoonsToor Dal (Split)
- 2 tablespoonsChana dal (Bengal Gram Dal
- 2 tablespoonsMasoor Dal (Whole)
- 2 tablespoonsWhite Urad Dal (Split)
- 2 tablespoonsYellow Moong Dal (Split)
- wateras required
- saltto taste
- 1-1/2 teaspoonTurmeric powder (Haldi)
Directions
- In a pressure cooker add toor dal, chana dal, masoor dal, moong dal , urad dal, 1/2 teaspoon turmeric powder, salt, and enough water and cook for 30 min and open the lid once it is cooled down and mix the dal properly and keep it aside.
- Heat oil in a heavy bottomed pan and add hing, cumin seeds, and mustard seeds and once it splutters add bay leaf, badi elaichi, green cardamom, star anise, cloves and salted dry green chilies.
- After 30 seconds, add the green chilies and ginger-garlic paste and cook it for a minute.
- Add the thinly sliced onions and cook till they turn brown and once done, add the tomatoes and turmeric powder, red chili powder, coriander powder, and salt.
- Add a little water and cook it for 5 to 8 minutes or cook till the masala is properly cooked.
- Add the cooked dal and adjust the consistency of water and cook for 8 to 10 minutes on low flame switch off the flame and garnish with fresh coriander leaves.
- Serve it hot with paratha.
