Eggless Plum Cake Recipe
Christmas celebration is incomplete without plum cake, So this Christmas try this delicious, soft Eggless Plum Cake recipe . This cake is loaded with various nuts and dried fruits.The cake is simply aromatic and also has a nice flavor and taste . This cake can be easily prepared at your home with easily available ingredients. Try this cake at your home and enjoy it with your family and friends.
Ingredients
- 1 1/2 cupsplain flour (maida)
- 1 tspbaking powder
- 1/2 tspbaking soda
- 2 tbsproughly chopped raisins (kismis)
- 2 tbsproughly chopped black raisins
- 2 tbsproughly chopped sweet cherries
- 1/4 cuptutti frutti
- 1/2 cuprum
- 1/2 cupsoft butter
- 3/4 cupcondensed milk
- 1/2 tspcinnamon (dalchini) powder
- 1/2 tspnutmeg (jaiphal) powder
- 1 1/2 tbspcocoa powder
- 1/2 tspvanilla essence
- 1 cupchopped mixed nuts (cashew , walnuts and almonds)
- 2 tspgrated orange rind
- 6 tbsporange juice , refer the notes below
- Sugarsyrup for brushing(in a bowl, add powered sugar and little warm water and mix it nicely)
Directions
- In a bowl, add the plain flour, baking powder and baking soda and keep it aside.
- In a bowl, add raisins, black raisins, sweet cherries, tutti frutti and rum, mix it nicely and cover it with a lid and keep aside for 24 hours.
- In a bowl, add the butter and condensed milk and mix it nicely by using a whisk till it is smooth.
- Then add the flour mixture gradually and fold it gently by using a spatula.
- Add the cinnamon powder, nutmeg, cocoa powder, vanilla essence, soaked dry fruits, mixed nuts, orange rind and mix it nicely.
- Add the orange juice little by little to adjust the consistency.
- Transfer the mixture in a greased 200mm. (8") aluminum tin and bake in a preheated oven at 180°c (360°c) for 35 to 40 minutes.
- Remove from the oven and loosen the edges of the cake tin by using a knife and de mold it by inverting the tin over a board and tap gently to de-mold the loaf.
- Brush the loaf with little sugar syrup and keep it aside for 10 to 15 minutes.
- Cut into thick slices and serve it or store in an airtight container and enjoy whenever you want to.
Notes
- Use orange juice accordingly to adjust the consistency of the batter.
- Instead of rum, you can soak the dry fruits in apple juice.
