Grilled Corn and Capsicum Sandwich Recipe
Grilled Corn and Capsicum Sandwich is a tasty sandwich prepared with corn and capsicum. It can be served for breakfast, pack for your lunch box or can also be served as an evening snack. The corn and capsicum gives a nice delicious texture and taste to the sandwich.
Ingredients
- 1 1/2 cupsboiled sweet corn kernels (makai ke dane)
- 1/2 cupfinely chopped capsicum (red, yellow, and green)
- 8bread slices
- 1 tbspbutter
- 1/4 cupfinely chopped onions
- 1 tspfinely chopped garlic (lehsun)
- 2 tspfinely chopped green chilies
- saltand freshly ground black pepper (kalimirch) to taste
- butterfor spreading and brushing
Directions
- Heat the butter in a broad non-sick pan, add onions, garlic, and green chilies and fry on a medium flame for a few seconds.
- Add the chopped capsicum, boiled sweet corn, salt, and black pepper powder, mix it well and cook on a medium flame for 1 to 2 minutes and stir occasionally and switch off the flame.
- Divide the mixture into equal portions and keep it aside to cool completely.
- Place a bread slice on a clean, dry surface and butter them lightly.
- Spread a portion of the corn- capsicum mixture evenly over the bread slice and sandwich it with another bread slice with the buttered side facing downwards.
- Brush a little butter on top of the bread and grill in a greased preheated sandwich griller/ maker for 4 to 5 minutes or cook till it turns crispy and brown from both the sides.
- Cut the sandwich diagonally into 2 equal pieces and serve this tasty sandwich with fresh watermelon salad.
