Chili Coriander Fried Rice Recipe

Ingredients
- 2 cupsBasmati rice
- 2cloves Garlic, finely chopped
- 2Thai Red chili (Birds Eye Chili), finely chopped
- 1Green Chili, finely chopped
- 1/4 teaspoonBlack pepper powder
- 1 teaspoonSoya sauce
- 1/4 cupCarrots, finely chopped
- 1/4 cupCabbage, finely chopped
- 1/4 cupSpring Onions (Scallion), finely chopped
- 1/4 cupCoriander leaves (Dhania), finely chopped
- 1 teaspoonCooking oil, for cooking
- Saltto taste
Directions
- Wash the rice and soak the rice in 3 cups of water for 30 minutes and after 30 min drain the water from the rice and transfer the rice to a cooking pan and cook with 4 cups of water, salt and 2 tablespoons of oil.
- Cover it with a lid and cook for 15 minutes or cook until the water has been absorbed by the rice.
- Turn off the flame.( Note The rice should not be overcooked, has to be 90% cooked) and keep it aside to cool.
- Heat oil in a wok and add the garlic, spring onions, carrots and cabbage and stir fry on high flame for a few minutes.
- Add the chilies and saute for a few more minutes and add the soya sauce, coriander leaves, salt and the cooked rice and mix it well.
- Serve the Chili Coriander Fried Rice Recipe along with chickpea salad
