Delicious Raw Mango Curry Recipe
Raw Mango Curry is a delicious sweet and spicy light curry flavored with tangy raw mango. This curry compliments well as a side dish for lunch or dinner. Raw mango curry adds variety to the daily menu or it can be served as one of the dishes for the summer.
Ingredients
- 4Raw mangoes peeled cut into wedges/ cubes
- 1 tablespoonOil
- 1 teaspoonMustard seeds
- 1 teaspoonCumin seeds
- 10Curry leaves
- 2-3Green cardamoms
- 1-inchCinnamon stick
- 1 mediumOnion chopped
- 1 teaspoonTurmeric powder
- 1 teaspoonRed chili powder
- 1 teaspoonCurry powder (easily available in the market)
- 1 teaspoonGinger-garlic paste
- 1/2 cupFresh coconut scraped
- 1 tablespoonCoriander seeds roasted
- 2-3Dried red chilies
- 1 teaspoonbrown sugar/jaggery
- Saltto taste
Directions
- In a blender add coconut, coriander seeds and red chilies, a little water and blend to a smooth paste and keep it aside.
- Heat oil in a non-stick pan, add mustard seeds and cumin seeds and let them splutter. Add curry leaves, green cardamoms, and cinnamon, and mix it well and add onion and saute till golden till golden in color.
- Add turmeric powder, red chili powder, and curry powder, and mix it well and add ginger-garlic paste and saute till the raw aroma is gone.
- Add mango and mix it well and add about half a cup of water and cook on medium flame for 3-4 min.
- Add Blended paste to the curry and mix it well and add brown sugar and salt and mix it well and cook for a minute and switch off the flame.
- Transfer into a serving bowl and serve hot with steamed rice.
