Tasty and Easy Rasgulla Recipe
Rasgulla is a classic sweet dish that is very popular in West Bengal, India. Delicate cottage cheese dumplings, soaked in sugar syrup, they are known as Rasgulla. This sweet dish is soft, spongy and very tasty. This dish is perfect for any festivals. This sweet can be prepared very easily at your home if you follow the procedure correctly. Ingredients
For The Chenna
- 2 1/2 cups(1/2 liter) cow’s milk
- 2 1/2 cups(1/2 liter) buffalo’s milk
- 1 1/2 tbsplemon juice
Other Ingredients
- 1 cupsugar
Directions
For the Chenna
- In a deep pan, add the cow’s milk and buffalo’s milk and cook on a low flame and switch off the flame.
- Add the lemon juice gradually and keep stirring gently and allow it to stand for ½ minute to curdle and when it is completely curdled, the Chenna and the whey (greenish water) is separate from each other.
- Then the strain the water (greenish water) by using a muslin cloth and then place the muslin cloth with the Chenna in a bowl of fresh water and wash it 2 to 3 times.
- Then the muslin cloth and hang it for 30 minutes, so that the extra water, drains out from it.
How to proceed
- Put 5 cups of water in a pressure cooker, add the sugar and bring to a boil and stir occasionally so that the sugar dissolves completely.
- Meanwhile, squeeze the remaining from the muslin cloth and place the muslin cloth on a flat plate, open it and knead the Chenna very nicely by using your palms for 3 to 4 minutes or till the Chenna is smooth and free of lumps.
- Divide the Chenna into equal portions and roll each portion into small balls and put the Chenna balls into the sugar water and cover it with a lid and steam for 7 to 8 minutes and switch off the flame and allow it to stand in the steamer for 10 to 15 minutes.
- After 15 min, remove it gently into a bowl and serve it.
