Tasty Cucumber Curry Recipe
Cucumber Curry is a very simple and common Indian dish consume during the summer to beat the heat. This easy recipe can be served with steamed rice. This delicious recipe is loved by people of all age. Let’s try this recipe.
Ingredients
- 3 largeCucumber peeled
- 1-inch pieceGinger
- 5-6 clovesGarlic
- 6Black peppercorns
- 1-2Dried red chilies
- 1/4 cupRoasted peanuts
- 2 tablespoonsOil
- 2 teaspoonsSplit black gram skinless (dhuli urad dal)
- 2 mediumOnions chopped
- 1 mediumTomato
- To tasteSalt
- 1/4 teaspoonTurmeric powder
- 1/2 teaspoonCumin powder
- 1/4 teaspoonRed chili powder
- 2 tablespoonsCoconut milk
- A few sprigscoriander leaves
- 1Fresh red chili slit-1
Directions
- In a blender add ginger, garlic, black peppercorns, dried red chilies, and peanuts with a little water and blend to a smooth paste and quarter the cucumbers vertically and cut into big pieces and keep it aside.
- Heat oil in a non-stick pan and add black gram and saute till they turn a light brown in color and add onions to the pan and saute till soft.
- Chop tomato and add to the pan and saute it and add cucumber, salt and mix it well. Add turmeric powder, cumin powder, red chili powder, and fry it for 2-3 minutes.
- Add the blended peanut paste, coconut milk and mix it well and cover it with a lid and cook on medium heat for 10 minutes and switch off the flame.
- Transfer into a serving bowl and garnish with a fresh coriander sprig and fresh red chili and serve it hot with roti.
