Make incisions on the chicken pieces and heat 1 tablespoon oil in a non-stick pan. Add chopped onion and saute till it turns translucent and add garlic and saute on high flame for a minute. Add tomato ketchup, chili sauce, and barbecue sauce and mix it well and add mustard powder, red chili powder, salt, and pepper powder and mix it well. Add 1 tablespoon brown sugar and vinegar, mix it well and cook for 10 minutes on a low flame or till the sauce thickens. Remove from the flame and keep it aside to cool at room temperature. Take chicken in a bowl and reserve some of the prepared sauce for serving and add the remaining sauce to the chicken and mix it well and marinate for ½ hour. Place marinated chicken on the greased tray, put the tray in preheated oven and roast for 15-20 minutes. To make caramelized onion, heat butter in a non-stick pan and add onion rings and saute till it turns pink. Add brown sugar, mix it and let it caramelize and remove from the flame and set it aside. Transfer the chicken to a serving plate and serve hot with reserved sauce and caramelized onions. Ingredients
