Drain on an absorbent paper and keep it aside. Add the jaggery and ¼ cup of water, mix it well and cook on a medium flame for 6 to 7 minutes and stir continuously. Add the deep-fried bananas, mix it well and cook on a medium flame for 2 minutes or till they coat evenly and stir continuously. Add the cardamom powder and ginger powder, mix it well and cook on a medium flame for 1 to 2 minutes and stir continuously. Switch off the flame, cool for approx. 3 minutes and stir occasionally. Add the powdered sugar and mix it very well to coat the bananas evenly and cool it completely at room temperature for 1 to 2 hours. Sharkara Upperi is the sweet version of banana chips and it is made with jaggery. This sweet is a popular snack dish of Kerala and it is prepared during Onam. This dish crunchy, tasty and very easy to prepare. This snack has a nice unique taste and you can munch any time in the day. Let’s follow this recipe.

Ingredients

  • 2 cupspeeled raw banana roundels, cut into halves
  • coconut oilfor deep-frying
  • 3/4 cupchopped jaggery (gur)
  • 1/2 tspcardamom (elaichi) powder
  • 1 tspdried ginger (soonth) powder
  • 1/2 cuppowdered sugar

Directions
