Tasty Vegetable Makhanwala/Makhani Recipe
Vegetable Makhanwala is an authentic North Indian vegetable gravy. It is served with roti and can also be paired with pulao or biryani. This dish is perfect for weekend lunch or dinner. Follow this tasty recipe.
Ingredients
- 1carrot
- 6beans
- 1potato
- 10 - 15 floretscauliflower
- ½ cupgreen peas
- 2onion
- 3 (medium)tomato
- 4 - 5garlic
- 10 - 12cashew nuts
- 1green chili
- 1½ teaspoonred chili powder
- 1 tablespooncoriander powder
- ½ teaspoonpepper powder
- 1 teaspoonskasoori methi
- ½ teaspoongaram masala
- ¼ cupcream
- ¼ cupmilk
- ¼ teaspoonsugar
- 1 tablespoonbutter
- saltto taste
To temper:
- 3 tablespoonsButter
- 2cardamom
- 2cloves
- 1-inchcinnamon piece
- 1Bay leaf
- 1 teaspoonshah jeera
Directions
- Step1Peel the skin of the potatoes and cut into pieces and wash and cut all the other vegetables into pieces and keep it aside.
- Step2Wash and put cauliflower in boiling water for 5 - 6 minutes and then drain the water and transfer it to another plate.
- Step3Chop onion and tomatoes into pieces and keep it aside.
- Step4Soak cashew in hot water for 15 - 20 minutes and then grind it to a smooth paste.
- Step5Heat butter in a pan, add garlic, onion and saute well till it becomes transparent.
- Step6Add tomatoes and saute till it becomes mushy and oil starts separating on the sides of the pan.
- Step7Turn off the flame and keep it aside to cool and blend this cooked mixture in a blender to a smooth paste and keep it aside.
- Step8Heat butter in a pan and add chopped veggies and saute well till it gets cooked till ¾Th and transfer it to another plate, keep it aside.
- Step9Heat a pan with butter, and add cardamom, clove, bay leaf, cinnamon, and shah jeera and fry it nicely.
- Step10Add finely chopped garlic and saute well till the raw smell goes off.
- Step11Add all the vegetables and saute again for a few more second and add onion-tomato puree, mix it well.
- Step12Add tomato sauce, mix it well and then add cashew paste.
- Step13Add red chili powder, coriander powder, garam masala, kasoori methi and salt and mix it well.
- Step14Add a little water, cover it with the lid and cook on low flame till vegetables get cooked well.
- Step15Add cream little by little and keep mixing during this process.
- Step16Add pepper powder, mix it well and add milk and cook on a low flame.
- Step17Serve it hot with pulao.
