Healthy Pumpkin Soup Recipe
Pumpkin Soup recipe is simple and healthy soups for especially during the cold winter night. This is a smooth soup which is full of flavor. Let’s follow this recipe.
Ingredients
- 3 cupsred pumpkin (bhopla / kaddu) cubes
- 1 tsplow-fat butter
- 1/4 cupfinely chopped onions
- saltand freshly ground black pepper (kalimirch) to taste
- 1 tspdried oregano
- 1 cuplow-fat milk, 99.7% fat-free
Directions
- Heat the butter in a deep non-stick pan, add onions and saute on a medium flame for 1 minute.
- Add pumpkin and saute on a medium flame for 3 minutes.
- Add 4 cups of hot water, salt, and pepper and mix it well and cover with a lid and cook on a medium flame for 10 minutes and stir occasionally.
- Remove from the flame and keep aside to cool and once cooled, blend in a mixer till smooth.
- Transfer the mixture back into the deep non-stick pan, add oregano and milk, mix it well and cook on a medium flame for 2 to 3 minutes and stir occasionally.
- Serve it hot.
